Chapter 235 - Chapter 235: Making Glass Noodles

Eating mung bean cakes, Eric thought of another type of food made from mung beans, which could be used for soup or salads: glass noodles.

In his previous life when his family was poor, he only got to eat glass noodle soup cooked with chicken giblets or bones during Tet holidays or at feasts. Later, when he grew up and went to work, he cooked and ate it whenever he liked.

Glass noodles could be made from sweet potatoes, canna roots, and mung beans. Now Eric only had mung beans, so naturally, he chose to make them from mung beans.

Potato noodles were transparent, mung bean noodles were slightly ivory, and sweet potato noodles were slightly brown. Potatoes could also make noodles, but it was more elaborate, and noodles made from potatoes were only suitable for stir-frying.

Having both mung beans and potatoes, Eric decided to make both, as dried glass noodles could be stored for a very long time.

Soaking the mung beans first, to save time, Eric used hot water.
