Chapter 54 - Birthday Time? 6, Cha 52

She doesn't seem to be going to sleep any time soon.

"Papa, pass me that!" She pointed at a mini screwdriver.

Her birthday is over for today, and it's 11 pm now. When will she sleeps? It isn't even a problem if she doesn't sleep. She never does. But-

Sieziri. (Recipe)

Ingredients

2 cups mashed potatoes or a soft starchy base

1 cup flour or rice flour

1/2 cup grated cheese

2–3 tbsp sugar or honey

A pinch of salt

Optional spices: cardamom, cinnamon, or a tiny bit of nutmeg

Water, as needed

Oil or butter for light pan-finishing if desired

Filling / coating idea

you can shape it like small stuffed dumplings or soft patties:

Extra cheese

Sweetened mashed filling

Optional milk powder or condensed milk for a richer sweet taste

Method

Make the dough/base

Mix mashed potatoes with flour, a pinch of salt, and a little water until you get a soft, moldable dough.

Add sweetness

Mix in sugar or honey, and optionally a little cardamom or cinnamon to give it a dessert-like taste.

Shape it

Form small round, or flatten them slightly like thick discs.

Boil them

Drop the patties(or whatever is the shape) into simmering water and cook until they float and firm up.

Drain well

Remove and let them rest so excess water goes away.

Top with cheese

Sprinkle grated cheese on top while still warm so it melts slightly.

Optional finish

If you want a richer version, lightly pan-fry them after boiling for a soft crust, but keep them mostly boiled.

What it would taste like

Sieziri would probably be:

soft and filling

lightly sweet

slightly savory because of the cheese

somewhere between a snack and a dessert.

Tichela (recipe)

Ingredients

1 cup soy chunks

2–3 cups water for boiling

1 small onion, finely chopped

1–2 tsp ginger-garlic paste

1 tsp salt

1 tsp black pepper

1 tsp cumin powder

1/2 tsp coriander powder

1/2 tsp chili powder, optional

2–3 tbsp flour, breadcrumbs, or mashed potato for binding

1–2 tbsp oil or butter

Optional: a little lemon juice or soy sauce for extra depth

Method

Boil the soy chunks until fully soft.

Drain and squeeze out water very well.

Crush or mince them into a coarse, meat-like texture.

Mix with onion, spices, and a binder.

Shape into small patties, strips, or kebab-like pieces.

Grill, roast, or pan-fry until the outside is browned.

Serve hot as a side dish.

It will taste good, can't describe.

Grace Drink (recipe)

Take pot milk

Boil it to mild temperature

Take the excited blood

Mix halfway stirring to each other

Add honey

Mix other half part of excited blood

Wait for 2 minutes

Add ice cubes

And boom. Your juice or whatever is ready.

Ok just don't make this shit, it doesn't taste good at all. Even with honey, it tastes shit.

Junkwi Hyana (recipe)

Ingredients

For the base

1 small whole wheat flatbread or multigrain thick roti

1 tsp olive oil or ghee, lightly brushed

For the paneer

1 cup fresh paneer, cut into small cubes

1 pinch salt

1 pinch black pepper

1 pinch chili powder

1/2 tsp ghee or olive oil

For the gravy

2 medium tomatoes, chopped

1 medium onion, chopped

8 cashews

4 garlic cloves

1 small ginger piece

1 green chili

1 tsp olive oil or very little ghee

1/4 tsp turmeric

1/2 tsp red chili powder

1/2 tsp roasted cumin powder

salt to taste

water as needed

For the ground toppings

1 tbsp roasted sesame seeds, ground

1 tbsp roasted cashew powder

1 tbsp paneer crumble, lightly dry roasted and crushed

1 pinch chili flakes

1 pinch black salt

Optional healthy finish

finely chopped coriander

a spoon of thick curd whisked smooth, if a creamy finish is wanted

Method

1. Make the gravy base

Dry roast or lightly toast the cashews.

In a pan, add very little oil.

Cook onion, garlic, ginger, and green chili until softened.

Add tomatoes and cook until fully broken down.

Let it cool slightly, then blend into a smooth paste.

2. Cook the gravy

Return the paste to the pan.

Add turmeric, chili powder, cumin powder, and salt.

Cook on low flame until thick and rich.

Add only a little water so the gravy stays heavy, not watery.

Simmer until it becomes smooth and glossy.

3. Prepare the paneer

Lightly warm paneer in a pan with a few drops of ghee or oil.

Add salt, pepper, and a little chili powder.

Keep it soft; do not fry heavily.

4. Prepare the base

Toast the whole wheat or multigrain base lightly.

It should stay soft enough to absorb gravy while holding shape.

5. Assemble

Place the round base on a plate.

Spread a thick layer of tomato-cashew-onion gravy.

Add paneer pieces generously.

Pour a little more gravy over the top so the dish remains loose and saucy.

Sprinkle the roasted ground topping all over.

6. Finish

Add chopped coriander.

If needed, a tiny spoon of whisked curd can be dotted on top.

Serve warm.
